Tuesday night, no desire to cook? 🇮🇹 With pre-made beans and two eggs, in 10 minutes you'll have a rustic, hearty dish just like they used to make in the countryside—toasted bread softened in hot sauce, exactly like traditional *pancotto*.

An ancient pairing

Before becoming an elegant "leftover" dish, the pairing of beans and stale bread originated in the peasant kitchens of Southern Italy, where nothing went to waste. Dry bread, softened in the hot legume sauce, became a complete and substantial meal—what is still called pancotto in many regions today. In Puglia, the homeland of this tradition, almost every family has its own variation, with wild greens, anchovies, or simply garlic and oil. The poached egg, here, is a more modern touch: it enriches the dish without betraying its humble, genuine spirit.

1. Heat the beans

Pour the hunter-style borlotti beans into a pan and heat over low flame, stirring occasionally.

2. Create wells

With a spoon, create two small wells in the beans and crack an egg into each.

3. Cook the eggs

Cover the pan and let cook for 4-5 minutes, until the egg whites have set and the yolks remain soft.

4. Prepare the pancotto

Rub the slices of toasted bread with garlic, then dip them for a few seconds into the hot sauce at the edges of the pan to slightly soften them.

5. Serve

Bring the pan to the table as is: a drizzle of organic De Santis oil, a grind of pepper, Parmesan if you like, and the toasted bread for soaking up the sauce.

The Tuesday trick

The hunter-style beans are already seasoned: no sauce to prepare, just to heat up. In 10 minutes you have a complete, protein-rich, and typically Italian dish, requiring very little effort after a busy day.
